SWEDISH PANCAKES 3

INGREDIENTS
Set out a griddle or large, heavy skillet. A Swedish Platt pan may be used for these. Sift together in a large bowl and set aside:
  • 1 1/2 c. sifted flour
  • 3 tbsp. sugar
  • 1/2 tsp. salt
Beat in a bowl until thick and piled softly 3 eggs. Beat in until blended:
  • 2 c. milk
  • 2 tbsp. melted butter
SWEDISH PANCAKES INSTRUCTIONS
Add to dry ingredients and beat until smooth. Heat griddle over low heat (it is hot enough when drops of water dance in small beads). Lightly grease with butter. For each pancake, spoon about 1 tablespoon batter onto griddle. Each pancake is about 2 1/2 to 3 inches in diameter. Enjoy the pancake !

Swedish Pancake Ingredients :
  • 1 sm. can evaporated milk
  • 2 cans water
  • 2 tsp. sugar
  • 2 c. flour
  • 2 eggs
  • 1/8 tsp. salt
  • 1 tbsp. butter, melted
Swedish Pancake Instructions
Batter should be conshstency of light cream sauce. Adjust consistency with milk or additional flour. Cook on Swedish pancake skillet or in regular skillet; silver dollar size. Enjoy it !

SWEDISH PANCAKES 2

INGREDIENTS
  • 3 eggs
  • 1 c. milk
  • 1 c. flour
  • 1 tsp. vanilla
  • Pinch of salt
  • Lingonberries (optional)
  • Maple syrup (optional)
INSTRUCTIONS
In a bowl, combine the eggs, milk, flour, vanilla and salt. Pour about 1/4 c. into a hot fry pan, tilting the pan to cover the entire bottom. Cook for a few seconds and turn. Cook a few more seconds and it's done.

Roll up the pancakes and put them on a plate. Serve with Swedish lingonberries, maple syrup, or your favorite topping.

SWEDISH PANCAKES WITH LINGONBERRIES

Swedish Pancake INGREDIENTS
  • 1 c. sifted flour
  • 2 tbsp. sugar
  • 1/4 tsp. salt
  • 3 eggs, beaten
  • 3 c. milk
  • 1/3 c. butter
  • Lingonberry preserves
Swedish Panckae INSTRUCTIONS
Sift flour, sugar and salt together. Then add eggs and milk slowly. stir until well blended. Let stand 1 to 2 hours. Heat a griddle, skillet or tempered Swedish pancake pan. Brush well with butter. Spread hot cake batter thin. brown on each side. Roll hot cakes. Serve with lingonberry preserves. Enjoy the pancakes !
